Nicoise salad with tinned bluefin

The most important thing in any dish is the quality of ingredients used. Please keep that in mind when shopping for this dish! This salad recipe serves 4.

SALAD:
1 cup baby spinach
1 cup baby kale
1 cup microgreens
1 cup arugula
1 cup haricots verts, sauteed in 1 tbsp EVOO
1 cup of roasted baby potatoes
4 soft boiled eggs (recommend “six minute eggs”)
1 cup Castelvetrano olives, whole
1 cup of grape tomatoes, halved
1 can of Gulf of Maine Conservas Tinned Bluefin

VINAIGRETTE:
1/4 cup EVOO
2 tbsp red wine vinegar
1 tbsp dijon mustard
Juice of 1 whole lemon
Salt and pepper to taste
Shake in jar to emulsify

We recommend arranging your dish starting with a bed of lettuce. Then arrange your ingredients in equal parts over the lettuce. Save the oil from the tuna can and add that to your vinaigrette. Dress the salad table side and enjoy!

Roasted Red Pepper Tuna Tapas

This dish is not only a delicious, crowd-pleasing small plate, it’s also a visual riff on the traditional preparation of bluefin tuna - Japanese nigiri sushi. This tapas recipe serves 4.

1 can of Gulf of Maine Conservas Tinned Bluefin
1 large jar roasted red pepper
1 whole lemon
Toothpicks

Cut the roasted red pepper into 2” x 1” strips. Take chunks of bluefin from the can and place the red pepper over it. Spear with toothpicks. Season with lemon zest.

Sourdough bread, toasted and drizzled with good olive oil
Add 1/4 tin of Gulf of Maine Conservas Tinkers
Top with pickled onions and lemon zest

E.L.T. (Eel, lettuce + TOMATO)

We say it all the time - think of our tinned smoked eel as sea bacon! This open faced sandwich will turn even the most skeptical folks into eel lovers.

Sourdough bread, toasted and drizzled with good olive oil
Smear toast with aioli or mayonnaise
Layer on a few leaves of Boston Bibb lettuce
Add several slices of good quality tomatoes

Sprinkle with chopped chives
